Chardonnay Pork Chops
1 1/2 cups Chardonnay, 2 tbsp flour, 3/4 tsp dry mustard, 1/4 tsp salt, 1/4 tsp black pepper, 4 pork chops, 2 tbsp butter, 1 chopped onion, 1 cup cold beef stock.
Put 1 tbsp of flour, mustard, salt & pepper, chops in plastic bag, shake until chops well-coated. Melt butter in pan, saute onions over medium heat, 2 minutes. Add pork chops, browning both sides. Add 1/2 cup Chardonnay, cover, simmer 1 hour, add 1/4 cup of Chardonnay every 15 minutes to keep simmering. Remove chops, add remaining flour, mix. Add stock, whisk well until gravy thickens. Smother chops with gravy. Serve over rice with fresh vegetables.
Pears in Rose Wine with Vanilla Ice Cream
1 tbsp butter, 3 ripe medium pears, peeled, halved, cored, 6 thyme sprigs, 1 1/3 cups Rose wine, 1/4 cup wildflower honey, vanilla ice cream.
Melt butter in skillet over medium heat. Add pears, cut side down, then thyme sprigs. Cook 3 minutes until brown (do not turn pears over). Transfer to plate. Add Rose, wildflower honey to skillet, boil 4 minutes until mixture reduced to 1 cup, scraping up browned bits. Reduce heat to medium-low, add pears, cut side up. Spoon juices in skillet over pears, cover, simmer 10 minutes. Place 1 pear half, cut side up, on plate, drizzle with sauce from skillet. Spoon scoop of ice cream alongside pears. Serve.
